Fresh Cream and Fruit Asian Sponge cake

Sometimes a recipe is just too good to share lol. I made this for the second time and its just a piece of heaven. There are a few asian bakeries near me and i have always wondered how they made their sponges, so light and melt in the mouth. Its a bit like a chiffon cake but slightly different.

Eat your heart out folks!

If anyone can come up with a delectable sponge that melts in the mouth, is light as a feather please send me a link. I want to see if it can beat this.
